Our Chef
Loredana is the soul of our culinary philosophy. Every dish begins with her connection to the garden she personally tends and to the local producers she works with daily.
At Dimora Caiammari, she awaits the perfect moment to harvest sun-ripened tomatoes and silky eggplants to create her celebrated parmigiana. Her ricotta ravioli, delicate and cloud-light, are paired with a traditional Sicilian sauce prepared with tender beef, carrots, and fresh tomatoes, simmered to perfection.

Our Fresh Ingredients
The excellence of our cuisine begins with the purity and freshness of our ingredients. Every morning, we receive from carefully selected local producers an exceptional array of cheeses (including Pecorino Siciliano DOP and Provola delle Madonie) along with fresh ricotta, premium beef, the finest daily catch, vegetables from our own garden, and fruit picked from our mulberry, orange, and mandarin trees.
Our extra-virgin olive oil, which accompanies every dish, is sourced from our family estate in Palazzolo. Produced organically and pressed with care, it is fragrant, authentic, and crafted from olives harvested with devotion.
